I must admit that leftover roast potatoes are a rarity in our house – they are not something we end up with very often!
However, I was recently making roast potatoes and nearly at the end of a bag of spuds so I just kept peeling and chopping until they were all gone. And this made way more roasties than we needed for just the three of us meaning there was actually some leftover for a change!
I popped them in the fridge and spent a couple of days wondering what to do with them and in the end, this is what I came up with.
We enjoyed them as a pre-dinner snack when my husband came home from work but I think there are loads of different ways you can serve them.

Garlic and Parmesan are one of my favourite flavour combinations and we often make fries with garlic butter and parmesan as a special treat.
These are slightly different but still taste amazing. If you have leftover roast potatoes from Christmas Day they make a fantastic addition to a Boxing Dat buffet!

Once you’ve made these, I would not recommend freezing them as I find roast potatoes don’t freeze particularly well as it is, let alone after being reheated!

There are loads of ways you can serve these Air Fryer Garlic Parmesan Leftover Roast Potatoes but I think they are best when served hot straight from the Air Fryer.
They make a really tasty accompaniment to chicken, pork and fish and as I mentioned above, are great for serving as part of a buffet too.
How Long Do Air Fryer Garlic Parmesan Leftover Roast Potatoes Take To Cook?
These took around 12 minutes to cook although all appliances are different so you may find you need a little more or a little less time.
For reference, I use a Tower Air Fryer similar to this one (mine is pretty old so that model is no longer for sale!) and cook at 170°C – any hotter and I find the potatoes start to burn – any lower and they don’t crisp up enough!
I tend to check on the potatoes a couple of times while they are cooking just so I can gauge how well done they are and give them a bit of toss to ensure they are cooking evenly.

This recipe is really easy to make, but don’t worry if you don’t have the exact same ingredient quantities as I have listed here.
Air Fryer Garlic Parmesan Leftover Roast Potatoes are one of the recipes where it should still work even if you have more or less leftover roast potatoes or if you decide you’d prefer less garlic and more parmesan (or vice versa!)
If you don’t have ready grated parmesan you could cut some from a larger piece and blend it until fine crumbs – I often use a coffee grinder to this to save getting the big blender out for such as small job.
You could also substitute the fresh parsley for dried or use fresh or dried rosemary which works just as well.
