Surely it’s not just me that’s completely obsessed with Halloumi? I’m currently loving it in all it’s forms – deep-fried, grilled, even in a wrap as a tasty lunch. Halloumi fries have become a firm favourite in our house – either as a side or as a stand-alone snack. They are delicious, easy to make and in this version have herbs added to give them an extra kick of flavour.
If you fancy making these herby halloumi fries, you will need a deep fat fryer as this is what produces, in my opinion, the best results.
If you don’t have a deep fat fryer you can use, heat a few inches of vegetable oil in a deep cooking pan on the stovetop. However, it can be difficult to regulate the temperature of the oil using this method and there is also a higher fire risk, so be super careful if you do use this option.
While I don’t use my deep fat fryer in everyday cooking, it nice to use it to make the occasional deep-fried treat, such as these halloumi fries.
Remember when using the deep fat fryer it will need some time to heat up – usually around 20 minutes. The prep for the recipe take less than 10 minutes so you may want to try and time it so everything is ready together.

This recipe uses cornflour instead of regular flour – often those following a gluten-free diet can actually eat cornflour so these halloumi fries make a great GF option too.
Another great thing about this recipe is you can use whatever herbs you like. My preference is parsley or rosemary as I think they work best with the salty flavour of the cheese. You can use fresh or dried herbs for this recipe – whichever you have to hand.

I like to serve my halloumi fries with a sweet chilli sauce but you choose whatever sauce you fancy to go with them. I find cooking one-third of a block of halloumi is enough for a snack or a side dish but if you want to cook the whole block it will need to be done in batches. Keep the cooked halloumi in a warm oven until the other batches are done if you want to serve it all together. Avoid overcrowding the fryer as the fried tend to stick together.
